Japanese rice vinegar, also called rice wine vinegar, is a pale yellow colour and has a mild, sweet flavour compared to western vinegars. Chinese rice vinegar is a white clear colour, very acidic and is not the preferred product to use. Use the Japanese for dressings, dipping sauces, braises and all types of cooking.
