Sometimes spelled Shaohsing, Chinese rice wine is used for braises like the famous red-cooked pork belly or in stir-fry sauces and marinades. Produced by fermenting glutinous rice, it tastes more like sherry than sake. It’s an essential ingredient for Chinese cooking and should be easy to find in most supermarkets.
