The shiny, green/black paper used to wrap sushi is made from seaweed shredded to a paste and then pressed into sheets. It’s sold in different grades with the lightest green colour being the poorest quality up to the darkest green/black being the best. Use leftover sheets to roast over an open flame, crumble and sprinkle over noodles, salads, rice and okonomiyaki.
