The sharp, nostril-flaring accompaniment to sushi, wasabi paste is produced from grinding the root of the wasabi japonica plant. But that’s not the product most of us are spreading on our sushi. Typically it’s a commercial paste made from ground horseradish, mustard and green colouring. The true pure wasabi is rarer and far softer in taste.
