This Indian spice mix can contain anything from five to thirty different ground spices. The Japanese brand S & B is very good and the Vietnamese make their own special recipe, which contains annatto powder. Curry powder is used widely across all Asian cooking. For the sake of simplicity, I would suggest buying a very mild yellow-coloured curry powder, such as Madras. Avoid using heavy spiced varieties like garam masala.
