A classic ingredient for making Peking duck or pork belly, five-spice is particularly loved by the Chinese and Taiwanese. BBQ sauces, glazes, marinades and braises all rely on its exotic combination. Although there are many variations of this powder, there are generally five spices used: star anise, cloves, cinnamon, Sichuan peppercorns and fennel seeds.
