This umami-loaded Japanese dry seasoning comes in countless variations. Typically it contains crushed bonito fish flakes or some fishy component, nori, sesame seeds, chilli, dried egg and yeast extract. On paper that doesn’t sound flavourful, but it’s truly delicious sprinkled on rice, salads, eggs and over soup. It’s also a wonderful seasoning for tofu before rolling in cornflour and shallow frying.
