This Asian citrus, also known as kaffir lime, is prized for its skin and the leaves that grow alongside. It has an intense lime flavour and both the leaves and zest are used in curry pastes, fish cakes and salads. If using leaves in a curry, add near the end of cooking to retain the citrus essence. Keep frozen in an airtight container.
