Also named Asian shallots or Thai red onions, these tiny purple-skinned alliums have a sharper taste than western shallots. Their lower water content also makes them ideal for frying crisp. When used raw in salads and dipping sauces, their sweet flavour and deep colour is appealing. Buy at Asian shops or online or you can substitute small French shallots.
