Heat the oven to 200°C/Gas 6. Peel and cut the salsify into lengths. Place in a roasting dish along with a few gently bashed garlic cloves and a bay leaf and toss with a drizzle of olive or rapeseed oil and salt and pepper. Roast for about 20 minutes, until tender. It’s good sprinkled with zingy gremolata.
