Your pork belly—once cured, smoked, and rested and cooled overnight in the fridge—is now slab bacon, and ready to be sliced and cooked like any store-bought bacon. Tightly wrapped in plastic and then foil, it will keep in the refrigerator for up to 1 week and in the freezer for up to 6 months.
