Vanilla Swiss buttercream is an excellent base for other flavors. Here are a few options we really like. For 1 lb [455 g] of buttercream, add the following and whip until completely incorporated. (The vanilla Swiss buttercream recipe for the Buttermilk Celebration Cake makes 3 lb [1.4 kg], the one for Cosmic Cakes makes 2 lb [910 g]).
Banana: ¼ cup [60 g] puréed banana
Chocolate Mint: 3 oz [85 g] melted and cooled semisweet chocolate and 1 tsp mint extract, blended to completely combine. The buttercream might curdle slightly, so continue to beat until it becomes smooth again.
