Pie plates or tins

You can bake a pie in almost any pie plate or tin, but I am partial to metal and Pyrex glass. Disposable tins generally produce a soggier crust, and ceramic pie plates, while by far the most attractive, tend to conduct heat unevenly (often due to the make and age of the pan).
