Using portioners is one of those little baker’s tricks. They allow us to have all our cookies, or whatever we’re making, be exactly the same size, which makes it easier to bake each one of them accurately and have them look more perfect when they are displayed. We suggest a portioner size for each recipe where appropriate. They are available online and in some cookware stores. Portioners aren’t 100 percent necessary, though. You can use your hands and eyes and a spoon and get cookies or scones pretty close to the same size.
