Commonly used in savory Japanese cuisine, this citrus-accented soy sauce is the perfect balance of salty, sour and sweet. I have never seen it used in pastry before, so that’s why I did. But that’s not the only reason. When applied to the right dish (and in the right amount), ponzu is instrumental in accenting a sweet, fatty base with marvelous nuance.
