Wire Racks for Cooling

My favorite racks are Combrichon round wire racks from France. The wire is spaced closely together, offering good support for a cake or tart. To prevent cakes from sticking to the racks, I coat the racks lightly with nonstick cooking spray. I prefer stainless steel rectangular racks for sheet pans and cookie sheets.
