Baking Powder

Use fresh baking powder—check the expiration date and if you are in a humid environment, replace the baking powder sooner. Use only a nonaluminum, all-phosphate product containing calcium acid phosphate, such as Rumford, for the flaky pie crust to avoid an unpleasant taste.
