Assembling a Cake in a Springform Pan

  • About
  1. Put the first cake layer into the prepared pan and brush with the flavored simple syrup (optional). Spread over about one-third of the mousse with an offset spatula.

  2. Insert a second cake layer. If the cake layers are fragile, use the bottom of another springform pan or a cardboard ring to support the layer as you move it.

  3. Brush the second cake layer with the simple syrup and cover with mousse. Put on the third cake layer, brush with syrup, and cover with the rest of the mousse.

  4. Take the cake out of the springform pan, add the final cake layer, and cover with frosting or glaze.
