After water, yeast, and flour have been mixed and the dough has rested, add the salt and mix the dough on slow speed for 3 minutes, or until the dough clings to the hook.
Turn the mixer to medium or high speed to get the dough to pull away from the hook and slap the sides of the bowl.
If the dough clings to the sides of the bowl, scrape the sides with a rubber spatula. Knead on medium speed for 5 to 10 minutes.
