Combine all the ingredients except the salt and mix until all the flour has been moistened. Cover with a moist towel or plastic wrap and let the dough rest for 20 minutes.
Continue mixing for about 5 minutes, or until the dough pulls away from the mixer bowl, then add the salt.
The salt sucks moisture out of the dough so that it adheres, again, to the bowl.
Continue mixing for about 7 minutes longer, or until the dough pulls away from the bowl again.
