Put the flour in the food processor’s work bowl and pour the water or the starter and water over it. Sprinkle the yeast over the water and let moisten for 3 minutes. Process for 10 seconds to moisten the flour, then cover with a moist towel or plastic wrap; let rest for 20 minutes.
Add the salt and process for 30 seconds. Let rest for 5 minutes. If the dough is distinctly warm, put the work bowl in the freezer with the dough in it. The dough may have formed little pellets; this is fine.
Process for 30 seconds more, and let rest for 5 minutes. Again, if the dough feels warm, put the work bowl in the freezer.
