Kneading dry Dough in a Food Processor

  1. Put the flour in the food processor’s work bowl and pour the water or the starter and water over it. Sprinkle the yeast over the water and let moisten for 3 minutes. Process for 10 seconds to moisten the flour, then cover with a moist towel or plastic wrap; let rest for 20 minutes.

  2. Add the salt and process for 30 seconds. Let rest for 5 minutes. If the dough is distinctly warm, put the work bowl in the freezer with the dough in it. The dough may have formed little pellets; this is fine.

  3. Process for 30 seconds more, and let rest for 5 minutes. Again, if the dough feels warm, put the work bowl in the freezer.

  4. Process for 30 seconds more. Gather the dough together into a smooth mass
