After the water, yeast, and flour have been mixed and the dough has rested, add the salt and process for 30 seconds. Let rest for 5 minutes. If the dough is warm, put the work bowl in the freezer with the dough in it during the rest period.
Process for 30 seconds more, then let rest for 5 minutes. Again, if the dough is warm, put it in the freezer, then process for 30 seconds more.
