Sandwich Loaves

To shape bread dough into a basic sandwich loaf, press the dough into a rectangle on a floured work surface. Fold both sides of the rectangle into the center and fold both ends of the rectangle into the center. Roll the dough toward you to form a cylinder. Press down along the front of the cylinder to firm up the surface of the loaf. Roll on the ends a bit to elongate the cylinder, then fold under the ends of the cylinder to make the loaf fit snugly in an oiled loaf pan. Cover the loaf with plastic wrap and let rise.
