  • Definition: Kneading is the process where dough is worked and stretched to build strength and elasticity through gluten development.
  • When It’s Used: This process is most commonly used when making yeast bread.
  • Tips for Kneading: Kneading can be done by hand or with a dough hook on a stand mixer. Dough will become more elastic and less sticky as it is kneaded, so try to avoid adding too much extra flour toward the beginning of the process. Kneading is discussed and shown in more depth in Chapter 9.
