Stage 1: Mixing

The ingredients are combined according to the recipe. At this stage, the goal is to simply make sure the ingredients are all together and a dough is starting to form. I like to use my hands during this stage and squeeze and pinch the dough all over to make sure all of the flour is thoroughly hydrated.
