All bread recipes in this book will be made with the mixing method known as the Straight Dough Method. This means that, during the mixing step, all of the ingredients are mixed together all at once, with the exception of proofing the yeast first if desired. It is very simple and takes a lot of the stress out of baking bread.

Since this mixing method is so simple, I want to focus more on the stages the dough goes through from start to finish. A variety of other mixing methods are utilized when making more advanced breads, but all bread dough essentially goes through the same stages. Gaining an understanding of these stages is essential for building your bread-baking confidence.
