Butter

Unsalted butter is used throughout the recipes. This allows you to control the amount of salt yourself. Also, salted butter is often less fresh than unsalted butter. If you can find a nice butter from pasture-raised cows, this will make a noticeable difference, especially in the pastry recipes.
