Flour is the most important ingredient you will need as a baker. To understand flour, you need to understand the common wheat kernel. As this book is not meant to be a textbook, but a helpful overview for the home baker, let’s keep it brief and simple.
Within the wheat kernel there are three main parts: bran, endosperm and germ. The bran is the outer layer and contains B vitamins and dietary fibre. The endosperm is the largest part of the wheat kernel, comprising most of the protein and starch. The germ, or the sprouting section, contains the oils and fats.
