Sweet bread may need covering with baking (parchment) paper after half the baking time if it appears to be browning too much on top โ€“ the sugar in the dough will create a darker crust. If the top of the oven is creating uneven hot spots position a shelf in the very top of the oven and add a baking sheet to it at the same time as adding your loaf to bake. It will heat up gradually with the loaf and conduct heat evenly onto the top of the loaf, helping to prevent it from burning.
