Yeast is very sensitive, so the water must be hand hot (the same temperature as a finger placed in it).
If using dried yeast, place the water in a small glass bowl and sprinkle the yeast and sugar, if specified in the recipe, over it Leave to dissolve for 5 minutes, then stir with a wooden spoon.
If using fresh yeast, crumble the yeast into a small glass bowl and add the water and sugar, if specified in the recipe. Cream together, then stir in a pinch of flour. Leave until bubbles form on the surface.
