Its dominating flavour adds character to a broth provided it is used in moderation. The outer leaves are more pungent than the inner ones which are best used in light broths or salads. Celery seeds may be used in thick broths instead of celery. Lovage is a good substitute for celery. High in potassium, calcium and vitamin C.
