Aniseed flavour which will dominate unless used with care. The delicate flavour goes well with fish. The finer inner leaves are milder and best for broths.
Avoid: Broccoli, Cabbage, Cauliflower and Brussels Sprouts, dominating vegetables which can disturb the balance of a broth. Their flavour (also their smell) becomes unattractive when cooked for too long.
