Place the beets in a steamer basket set in a saucepan to fit with about 1 inch (2.5 cm) of water. Cover and bring to a boil over high heat, then lower the heat to medium and steam for 35 to 40 minutes, until the beets can be easily pierced with a thin knife. Cool slightly and use your fingers or a paper towel to remove the skins.
