Queso Chihuahua is cheese made from cow’s milk in the state of Chihuahua. One of the most popular Mexican cheeses, it is high in butterfat with a flavor similar to mild cheddar. When aged, it becomes tangy. It’s typically used in chiles rellenos, Mexicanstyle fondue, and quesadillas. Good-quality Muenster or medium cheddar can be used in its place.
