Forget ovens that can’t heat to a high enough temperature, or grill racks that are too high, or too low. This handy little kitchen tool will allow you to create crispy, caramelized shells on the surface of crèmes brûlées, tarts, and pastries. It’s extremely easy to use, but naturally I always store it well out of the reach of my children who demonstrate an unhealthy curiosity for pyromania.
