This is the only utensil that involves a bit of “technique.” If you want to obtain a crystal-clear caramel, you must clean the sides of the pan with a damp brush while the sugar is cooking. This immediately dissolves the sugar crystals that form on the sides of the pan and stops them from solidifying the finished caramel.
