Cut-out Shapes

To make the flower shape (pictured top left, opposite), I poured out a small disk of caramel onto the silicone liner. Then, using a nifty Moroccan tool used for making patterns on cookies, I went round the edges while it was still soft to make the pattern.
To use cookie cutters as molds, simply pour the caramel in the middle of the cutter and let it harden before gently pushing the shape out using your thumb.
