Tomatoes are so sweet that they are being served increasingly for dessert. For an exquisite cooking juice, drizzle a mixture of olive oil, sugar, and balsamic vinegar over halved tomatoes, and cook at a very low temperature—250°F (120°C)—For 2-3 hours.
If you don’t have this much time, add a little olive oil and cook for 1½ hours at 300°F (150°C). Cherry tomatoes take even less time to cook—barely 30 minutes—and there are some really tasty varieties widely available.
