Parsnips have been around for centuries and are fast making a comeback. Prepared in much the same way as carrots, they have a flavor similar to that of turnips and a more porous texture. Drizzled with olive oil and roasted at 350°F (180°C) for about 1 hour, they are simply delicious with rare roast beef and horseradish sauce.
