A basic tomato sauce originally used in Spanish cooking. The Puerto Rican version differs quite considerably from the Spanish and is essential to the cooking of the island. It is also used on other Spanish-speaking islands. It can be made in quantity and stored in the refrigerator where it will keep for some weeks.
