Calabaza Squash

In the Caribbean, calabaza squash is commonly referred to as pumpkin. Sometimes it is also called West Indian pumpkin. The size of this squash varies greatly, but it is often very large, so it is usually sold cut. In most recipes, you can substitute kabocha squash, or any other winter squash.
