Vanilla sugar

We keep two jars of vanilla sugar going in rotation; each holds about 2 kg/4½ lb caster sugar with eight vanilla pods buried in it. As one jar is emptied we move on to the second, refilling the first jar and leaving for about 1 month to enable the sugar to absorb the vanilla flavour.
