Cleavers A modest-sized version of a butcher’s cleaver is an asset on a cheese plate, its sharp, wide blade ideal for cutting semifirm cheeses like Havarti or Gouda into even slices. Small, sharp knives that resemble scrapers are also in the cleaver family, and are especially handy for slicing firm wedges (hold the handle upright for the best cutting action).
