A cheese plane resembles a small, wedge-shaped spatula or cake server. A sharp slit at the base shaves off thin slices when passed over a block of cheese in smooth strokes. Planes should be reserved for use on semifirm and firm cheeses; softer varieties won’t pass through the opening as readily.
