Like a pimped-out mozzarella, burrata is a stretched-curd cheese with a filling of cream and mozzarella. It will increase the richness of your toastie with its unctuous interior and is best used in grilled cheese sandwiches that require minimal toasting, due to its high moisture content and quick melting. This is a luxurious alternative to mozzarella for the flatbreads, and my cheese on toast, and is also great in salads.
