This is the most ubiquitous of lentils and easy to source in most grocers, stores and supermarkets. They do not require soaking and are the quickest to cook, ready within 15 minutes. Orange in colour, they become yellow and soften during cooking. Any of my recipes that require yellow moong/mung dal can be substituted with red split lentils.
