These small yellow lentils are the second quickest to cook. They are easy to source in most grocers and supermarkets. Typically, they are cooked within 25 minutes, but sometimes, depending on the brand, they may take a little longer. You can cook without soaking but soaking even for a short while will speed up the cooking time. These can easily be substituted with red split lentils.
