Coriander is without doubt a core herb for me. Use the leaves and stalks; the latter add a huge amount of flavour when finely chopped and added to curries and dals. If a bunch of coriander is looking tired, make up some of my coriander, mint and lime chutney which works well with most things, even if you are going to simply grill some fish or chicken.
