Lily stems add a mild, flowery fragrance, a soft texture, a pretty golden color, and an interesting shape to stir-fried dishes and slowly simmered meats. They must be soaked in hot water for 15 minutes (or until they are soft), and the tough tips of the stems must be trimmed away. They are sold in packages and will keep indefinitely at room temperature if they are well wrapped.
