  • About
A circular steel-mesh strainer attached to a long split-bamboo handle. Strainers come in many sizes, from as small as the average palm to as large as 14 inches in diameter. For all-purpose use I prefer one 10 inches in diameter.
In addition to the specialized utensils listed above, I suggest the following to complete your Chinese kitchen:
  • oval Dutch oven
  • large roasting pans
  • frying pan, cast iron, 10 inches in diameter

  • selection of heatproof dishes

  • strainer, a fine, all-purpose household strainer
